ABSTRACT

Accurate particle size measurements are essential to

the control of quality in many products, such as

intravenous emulsions, paints, ceramics, and aerosols

to name just a few (1-3). In contrast to the very broad

range of particulate systems available, the number of

analytical techniques for particle size analysis is rather

small. Some books and reviews on particle size analysis

have been published recently (4-8). The main purpose

of this chapter is to describe the relevance of particle

size analysis for food products. In addition, some of

the major techniques will be briefly discussed, with

special attention to the sample preparation require-

ments. In Sec.VI, some examples will be discussed in

more detail.
