Summary

A study was made of the effect of corn and Mexican tortilla upon the growth of weanling rats fed diets low in niacin and tryptophan, with and without supplements of cystine.

Corn inhibited growth in cystine-supplemented rations, but tortilla actually stimulated growth. In the absence of cystine corn apparently failed to depress the growth, which was similar to that in rats fed tortilla.

An empirical test of shell tempering as an alkaline agent in the nixtamalization process

It has been argued that the transition to maize based diets across much of the Eastern Woodlands of North America ca. A.D. 1000 was the primary catalyst for the population increases, technological innovations, and fundamental shifts in social and cultural organization characteristic of Late Woodland, Mississippian, Upper Mississippian, and Iroquoian societies. However, raw or uncooked maize kernels alone are known to be a nutritionally inadequate subsistence staple. Nixtamalization, or the alkaline processing of dried raw maize to produce hominy, yields a more readily digestible and therefore healthier food resource. Such processing is ubiquitous amongst maize-based societies in the Americas. The timing of the transition to maize agriculture was also closely associated with the adoption of shell-tempered ceramics. As a result, an hypothesis has been offered by multiple authors that burned and crushed mollusc shell aplastic may act as an alkaline agent in the nixtamalization process. The research reported here provides a formal empirical test of this hypothesis. Findings indicate that no substantial structural or chemical changes to maize kernels result from the leaching of shell tempering alkaline products from the fabric of a ceramic vessel. Two constraints are noted in this process: the reduction in adherence of wet paste due to the addition of mussel shell derived calcium oxide (lime) or calcium hydroxide (slaked lime) as a tempering agent, and the necessity to avoid the decomposition of calcium carbonate to lime or slaked lime in order for the successful firing of shell-tempered vessels.
Alkaline cooking and stable isotope tissue-diet spacing in swine: archaeological implications

In this study we examine the effects of alkaline cooking on carbon and oxygen stable isotopic ratios of mineralized tissues from nine pigs raised on monotonous mixed C3/C4 vegetarian diets. Two sources of collagen (humerus and mandible) and two sources of apatite (humerus and enamel) were analyzed. Within each diet group, humerus and mandible collagens were found to record equivalent δ¹³C and δ¹⁸O ratios; however, enamel apatite was found to be enriched over bone apatite by 2.3‰ in carbon and 1.7‰ in oxygen. Alkaline cooking was found to slightly, but significantly increase the Δ¹³C_{collagen-diet} and Δ¹⁸O_{collagen-diet} of bone collagen. A similar trend towards enrichment was observed in bone and enamel Δ¹³C_apatite-diet and Δ¹⁸O _apatite-diet, but the differences were not significant. Observed isotopic shifts were consistent with increased nutrient utilization of the alkaline-cooked maize as compared to raw maize. In addition, a reexamination of the relationship between diet and tissue carbon isotopic values suggests that species and alimentary type should be considered when interpreting ancient diets.
