2023, European Journal of AgronomyCitation Excerpt :Maize grain is an important source of human and animal feed, and its quality is affected by management practices and climatic conditions (Rahimi Jahangirlou et al., 2022). The mature grain of dent maize is composed of storage components including 60–72% starch (Serna-Saldivar and Rooney, 2014), 8–11% protein (Wu and Messing, 2014) and 4–6% oil (Darrah et al., 2019). The glucose storage polymers of starch (amylose and amylopectin) can alter its physicochemical properties (Moran, 2019).
