Abstract

One of the most fundamental phenomena of multisensory flavor perception is oral referral of the taste and olfactory sensations associated with substances in the mouth. In order to fully understand this truly multisensory perception, this chapter starts by reviewing the basics of the sensory modalities and systems that are directly related to flavor perception (i.e., gustation, olfaction, and somesthesis/ chemesthesis). In addition, how the sensory information is processed and merged in the central nervous system is discussed along with perceptual evidence for multisensory interaction and integration including the oral referral of flavor components. Finally, the illustrations of oral referral are presented followed by their underlying conditions and mechanisms supported by perceptual and neural evidence.
