New edition of food preparation course

The Food Preparation Study Course: Quantity Preparation and Scientific Principles, by Lynne E. Baltzer and Shirley A. Gilmore, has been a product of the Iowa Dietetic Association since 1971. This third edition is a self-study guide directed to dietitians, dietetic technicians, dietary consultants, and managers who are directing the selection and preparation of food for groups.
