Abstract
A cell wall-bound proteinous factor which causes the gelation of apple pectin solution was examined as to whether it is identical with pectin methylesterase or not. Gel filtration and chromatographic analyses with columns of isolated cell walls and CM Sephadex strongly suggested their identity. The factor caused demethylation of the pectin.
