Zusammenfassung

Die chemische Umwandlung von Curcumin bei pH > 7 wurde untersucht. Ferulasäure und Feruloylmethan sind die ersten Abbaustufen des Curcumins. HPLC- und MS-Analysen haben gezeigt, daß die meisten sekundären Produkte von Feruloylmethan stammen. Sie können Fehler verursachen bei der spektrophotometrischen Bestimmung des Curcumin.

Summary

The chemical degradation of curcumin at pH > 7 has been investigated. Ferulic acid and feruloylmethane are formed as the first degradation steps. HPLC and MS analysis indicate that condensation products of the feruloylmethane part may form rapidly and cause an error in the direct spectrophotometric determination of curcumin.
