Abstract

In nature we can find a wide variety of colors, these colors are due to the presence of pigments. This chapter presents the basic information about plant pigments: chlorophylls, carotenoids, anthocyanins, and betalains; focusing attention on economic importance, chemical structure, sources, and main properties for health benefits. Particular emphasis is placed on the use of novel extraction technologies such as ultrasound, pulsed electric fields, ohmic heating, enzymatic, supercritical fluid, high pressure, and microwave on plant-based pigments recovery. Also, the most recent advances in their applications as coloring, therapeutic, and energy production agents are described.
