Abstract

Several epidemiological observations have suggested that a high dietary fibre intake is associated to a lower incidence of coronary heart disease1,2. In that line, several sources of soluble dietary fibers such as oat bran, guar gum, pectins and psyllium have been shown to lower plasma and LDL cholesterol in human subjects, as recently reviewed3,7. Dietary fibers, and especially soluble fibers, can alter several physiological and metabolic processes which are involved in the reported cholesterol-lowering effect of dietary fibers. These include nutrient intake, stomach emptying, carbohydrate and fat digestion and absorption, fecal excretion, postprandial blood response, peripheral tissues sensitivity, fermentation in the colon and liver metabolism7–9.
