Abstract

The utility of water soluble polysaccharides as suspending, stabilizing, viscosifying and gelling agents for many industrial applications has been recognized for many years. Products such as alginic acid, cellulose, guar-gum, starch and xanthan gum and their derivatives are being widely used in the food, cosmetic, paint, pharmaceutical, oil and various other industries (1, 2).
